Isabella's Lemon & Lime Chicken

Isabella's Lemon & Lime Chicken

Serves 4

4 chicken breasts
3 tbsp Isabella's Lemon & Lime Marmalade
Oil or butter for frying

  • Place the chicken in a strong polythene bag and lay flat on a chopping board.
  • Bash the chicken in the bag with the end of a rolling pin until flat.
  • Add the Lemon & Lime Marmalade to the bag and allow o marinade for at least an hour, but ideally overnight in the fridge.
  • Heat the oil/butter in a large frying pan before adding the marinaded chicken.
  • Cook the chicken until browned on both sides and the juices run clear.
  • Alternatively to BBQ lay the marinaded chicken on the grill over the hot coals turning until the chicken is cooked through.

This chicken is great served with a crispy jacket potato and a leafy salad.
